Hummin' and tappin' along with some Hummus...

One recent and very hot afternoon my kitchen assistants were looking for a snack.


I wanted to enjoy something cool, nutritious, and unusual. After all this is summer time and that means trying new things. So we tap danced our way to this fantastic version of Hummus!


Gather a blender, spatula, and these:


1 Tbsp. ground flax
3 Tbsp. hot water
2 cloves garlic, minced
1 lemon juiced (or equivelent of bottled lemon)
1/4 tsp. sea salt
2 Tbsp. EVOO
1/2 of a 15 oz.can whole, pitted black olives
1 tsp. parsley
1/4 tsp. cumin
1/4 tsp. cayenne pepper (*This is hot stuff so adjust to taste)
1 15 oz. can Chick Peas/Garbonzo beans


First combine (3 Tbsp. warm water, 1 Tbsp. ground flax) in a cup and let sit for at least two min. stirring occationally. While you wait head for step two.


Second add all items - with the chick peas last - to the blender. Use the high speed pulse button to integrate the items. Turn off the blender occationally and use a spatula to scrape sides. Taste and adjust spices to your preferences. If it seems to thick add a little olive oil at a time.



Hummus and Chip

We liked this on homemade bread and also on plain potato chips. Try it with carrot and celery sticks too. MMmmm. In fact the kitchen assistants liked it so much it did not last long! They danced away with full bellies. ☺
