Sweet Cinnamon Raisin Apple Muffins

Muffins make me want to dance the NOM NOM NOMM dance!


My kitchen assistants really enjoy muffins too - so come dance along with us! Nom NOM nom YUMMM!

We have found that the Betty Crocker Gluten Free box mixes for yellow cake are a great base for muffins! We have tried lots of different add in's - but this is one recipe that is just so darned good that I thought I'd share!

Whole Sweet Cinni Raisin Apple MuffinHalf Sweet Cinni Raisin Apple MuffinThe following makes a seriously yummy muffin!

GATHER THE FOLLOWING:

Oven preheated to 350
Muffin Pan coated with corn oil

1 box Betty Crocker GF Cake Mix, Yellow
2/3 cup of water
1/2 cup corn oil
2 Table spoons vanilla
1 ounce raisins (the box which is about the size of the deck of cards)
4 ounces of natural apple sauce (no sugar/corn syrup added)
1 teaspoon ground Cinnamon
1/4 teaspoon ground ginger
1/8 teaspoon ground cloves

2 tablespoons ground flax
6 tablespoons hot water (no need to boil)

DO THIS:

Combine the ground flax and hot water in a mug and set aside.
(It will get gooey and this is good.)

Mix the rest of the items together then add the flax mix.

Fill the muffin basins to the top - skip the paper things they become one with the mix in an unpleasant way!

Bake for 20 min and check for doneness. Allow to cool in the pan. The muffins should easily come out when they are all cooled! Enjoy!
