Corn Muffin Awesomeness

Hey Y'all today I'm dancing around the kitchen with the Corn Muffin two-step! So grab yer local honey and come on!


These are southern style. Even though they are Gluten Free - they are pretty light and altogether - yummy corn bread. Give 'em a try - they are good stuff!

In my home, Corn bread muffins have been a staple for as long as I can remember! It was one of the first things (and corn bread itself) I made as a grown up! It's something my Mom has always loved and made too. However the recipes I began with always included wheat flour as well as corn meal. I tried many a box/bag mix over the years and just have not found one that really was as good as Mom's. So I decided to experiment with corn meal and create a recipe on my own. 

What you'll need:

Preset your oven to 425 degrees.

1 muffin tin with full size muffin basins (not the minis)
Extra corn oil to grease the muffin tin

2 cups  Corn Meal

2 Tablespoons  Corn Oil

2 Tablespoons  ground flax seed
6 Tablespoons  hot water (just hot no need to boil)

2 cups  Soy milk
2 teaspoons  cider vinegar

1 teaspoon  baking soda
2 teaspoon  baking powder

What to do:

Place the ground flax seed and hot water in a mug or glass, stir. Then let sit while you do the rest of the prep. This should thicken.

Place the Soy Milk in a glass bowl and mix in the cidar vinegar. Leave this to sit as well but stir occasionally. This should get a little thicker and may clump - this is all good stuff!

Take the time now to oil up that muffin tin. You want to be sure to get good coverage on all surfaces but not leave lakes in the basins.

In a large mixing bowl place the corn meal - then mix in all the rest of the ingredients. Stir well.

Fill the muffin cups - but don't over flow.

Place in the preheated oven and set the timer for 20min. Don't over cook.

Once you remove this from the oven let it sit on the counter for a while. They are far easier to remove - and stay in tact - when they have cooled a bit. You may want to use a plastic knife or other tool to loosen the muffins - but try just turning over the tin and tapping the bottom first.
