Santa Ana's Texas Jumble

Texas Two Step with me into the kitchen for this recipe... y'all be glad you did!


This new recipe came about over the summer. I was inspired by a farmer who has parked his Farmstand under a tree in rural Santa Ana texas for 25+ years. His hand picked fresh produce includes okra and tomatos....

**What you need for the hearty one pot meal:

olive oil
1 lg onion; chopped
4 or 5 medium fresh tomatos; chopped
3 lbs fresh okra; coined
1 pkg of Andouille sausage coined (pederson farms is great- and it's a TX company!)
3 cups or 2 pouches of Success whole grain brown rice (extra large bags)
2 box veg stock
2 bay leaves
2 T minced garlic
1/2 T cayenne pepper
1 t oregano
1 t paprika
1/2 t basil
1/2 t pepper
Salt to taste

In a large pot add enough olive oil to saute the chopped onion and tomato. After the onions are soft add coined okra. Let cook for a while. Stir often. Add both boxes of stock. Add all spices etc. Add sausage. Add rice (removed from bag if in pouches). Let this all cook together until the rice is soft and it is all the consistancy of gumbo. Add water if needed while cooking. Adjust spices to taste prior to serving.
