Chick Pea Salsa style mash - appetizer

Exotic chips and dip for your group?

Don't knock this until you've tried it! This versatile recipe is seriously tasty! Depending upon your dietary needs this would be great in many different uses! I used this as a salsa style dip with fantastic chips from MSFC (http://www.mediterraneansnackfoods.com/) - "Sea Salt Baked Lentil Chips"! (My sesame free Hummus recipe is also fantastic with this!) Even a finicky child I love enjoyed this! Perhaps you could try this tonight for New Years Eve - that's exactly what I'm doing! Enjoy and Happy New Year!

2 cans Chick Peas
1 lemon squeezed (or Real Lemon Juice equivalent)
1/4 cup finely chopped onion
1/2 cup finely chopped fresh baby spinach
1/4 cup extra virgin olive oil
1/4 cup sliced black olives
 Sea salt, pepper, and garlic powder to taste.

You can add all of the above to a bowl and handle it how you prefer - I used the stand mixer with paddle attachment and splash guard until the chick peas are a little mashed but still a bit chunky. You could also use a potato masher by hand.

Another (far more entertaining) idea is to pour the chick peas into a zipper bag and get as much air out as you can prior to closing. Then smash and squeeze the bag - or use a rolling pin on the bag. The kids find this particularly satisfying while trying to out do one another in the process. You have to supervise this activity as the bag can break and make a big mess that only the family dog will love! ♥
