Banana-faux-Nut Waffles ;)

One of the things I miss living in the allergy-free zone is Banana Nut Muffins!



Banana-faux-nut waffles are wonderful gems which are a fantastic healthy fix for the muffin craving! So as the title implies these yummers are made with all the taste and none of the nuts/peanuts but with delicious nutritious Sunbutter! (www.sunbutter.com)  My kitchen assistants particularly enjoyed this recipe! We made extra and froze them in zipper freezer bags.

Collect the following:
 1 large bowl
 1 box of firm tofu (I use Mori-Nu Silken Firm Tofu)
 2 over ripe bananas
 1/4 cup (roughly) Sunbutter (we prefer the smooth variety)
 1 bag Bob's Red Mill GF Pancake mix
     Per Bob's package directions: rice milk and corn oil
 1 waffle iron, warmed up and ready to go per appliances directions

Blend all of the above ingredients together well in the large bowl. Then hand mix or use an electric hand mixer. Then use your waffle iron just as you would with any waffle recipe. This delightful creation is sure to be a hit! Once plated we melt Earth Balance butter substitute on the top - and WOW the muffiny waffley goodness...
